How do you gauge how much you are lacking in your diet of any particular kind of vitamin supplement?

I was taking vitamin C for a while, but I realized there was plenty in what I was eating so I cut down a bit. I'm not sure what is a bad level for any particular kind.

Hey I just read that what I read previously that made me stop so much C intake isn't true -- that kidney stones can be a result of too much vitamin C.

I just really don't want to get kidney stones :)

but wow 2000mg, why so much, do you not get much from food?
