all of my knives need sharpened. i'm buying a japanese waterstone (
this one) for this purpose. i'll post again with results!
I use the machines and then the metal stick thing to finish it. When I have to carve at length I get obsessed about sharpening.

I hate having to sharpen my blades... don't you ever hone them? You should only need to sharpen annually if you use them on a daily basis.

phi_: yeah, i hone my blades occasionally. i've never sharpened my kitchen knives (j.a. henckels twin signature set; i've been using them for two years) nor my pocket knife (sog fsa-8; i've been using it for seven months).

Ah, okay. I hone my kitchen knives before every use, and I hone my utility knife (aka, pocket knife, Gerber AR 3") once a month or so. Haven't in a while though ... nor I have I cleaned it in forever. I'm such a bad knife owner.

nothing is wrong - what are you scared of?
my grandma taught me to sharpen my kitchen knives on the bottom smooth parts of ceramic dishes. works like a charm and is free.

I'm confused...you hone your knives, but don't sharpen them? Aren't they the same thing? Honing is sharpening with a whetstone, I thought.

Honing is simply realigning the edge of the blade. Sharpening actually removes metal from the blade to produce a sharp edge.
