Don't Let Your Walls Down
I've read a bunch of stuff on dairy free diets and I've been convinced to give it a shot. I'm going to start by eliminating milk. I'm going to try out rice, almond, and coconut milk alternatives and see which one I like the best. Not even going to give soy a shot, as from what I've read soy isn't as good as the other three.

If all goes well, the next step would be to start eating mainly Mediterranean and Asian foods, safe alternatives that rarely ever use dairy products.

The biggest benefit I see coming from this, and I really like, is the amount of sweets that I will consume will drop drastically.

coconut milk is a bit sweet.. might be tough to drink by itself.. i can't really attest for the others that you mentioned, but it sounds like a good idea. making curry is great, especially if you get the paste kind and you just add 2 cans of coconut milk and some chicken and veggies.

You should try soy.

I may, but whats turned me off of soy is that it supposedly has more sugar content than rice, almond, coconut or even regular milk.

I'll be going shopping friday and do some comparisons then and check it out first hand.

The more I've been reading the more I want to try making home made almond milk.

Well the other big deal about soy is genistein or isoflavones or something. Apparently soy milk has adverse affects if you drink it regularly, on estrogen levels in the body. Who knows though. I think it tastes great. There's also some issue about it blocking absorption of certain minerals.

I could never give up cheese. Milk is terrible though, I never drink it.

I love cow milk. Haters.

In fact I used to be rather particular, but now I enjoy all varieties of cow milk: skim through whole.

I too enjoy cow milk, thus why I think this is going to be pretty tough.

according to a wsj article printed on 9/18, one gallon of cow's milk has a footprint of 11 pounds of co^2.

I've been drinking almond milk for the last few weeks and I've got to say, I'll probably stick with this.

Though, I will admit, I probably won't get to the completely dairy free state because in all reality, cows milk is the only milk you can put on cereal. No matter how much sugar you put in the substitutes, nothing has compared to cows milk.

The almond milk isn't terrible, the best way to describe it is thick almondy water. Doesn't sound very good but if you like a nutty taste then you would probably enjoy it. I'm still trying to find coconut milk though, can't seem to find anyone in the bmt that sells it.

i tried the vanilla almond milk and it's pretty good, and would be good on cereal but i just don't like the amount of sugar thats in it compared to the plain stuff. i should compare the sugar content to the cows milk i use i guess.

you can get canned coconut milk at most grocery stores in the asian section. It's pretty thick, I think it may be hard to just drink straight like regular milk :P

also, when you first open it, it might be solid, sometimes you will have to mix it because the solids and the water separate.

I've been living (mostly) dairy-free for months now. I still indulge in cheese once in a while, but I avoid cow milk entirely. I've learned the error of my ways and discovered rice and nut milks, though I use soy milk for baking usually.

heh i forgot about this thread. I've been semi-successful I would have to say in my efforts. I use almond milk almost entirely (no flavoring or sugar added) although I still use skim milk on cereal and small slice of swiss on the occasional sammich.
