Safety tips:
Only use Radio Taxis
Stay in tourist areas where there are an abundance of police or military personnel.
Keep a wallet with about 75 reais in it just in case you get robbed.
Beyond that:
Hit up a churrascaria. I am partial to Fogo de Chao. Assuming of course your friend isn't a dirty vegan. See the sights. Rio is an awesome tourism city. Hit up the art shops. Look into buying stone and wood sculptures. Brazil has an abundance for rare stones and many people make a living making hand made designs. You can get some amazing stuff very cheap there. Also don't be afraid to chat up locals. While there is a bit of a class divide between "rich" brazillians and the lower classes, everyone there is generally very nice and love to chat with foreigners. They frequently try to speak english if they know it, and love to hear you try to speak their language.

Rio I only visited once. But it is a beautiful city. There is no absence of great stuff to do. Look into doing a few nights at the copa cabana palace. It's not too expensive and is an AMAZING hotel with an ridiculous history right on copa cabana beach.
Yeah, get some good
rodizio BBQ. There's no Fogo de Chão in Rio, but
Porcao is usually considered the best churrascaria.
There's an Irish pub called
Shenanigans that is really popular and is usually full of tourists. Not sure if coming to Rio to visit an Irish bar is cool though :P
Rio is a beautiful city (much more from a distance, unfortunately) so yeah, tell her to see the sights. The classic ones are
Corcovado, the Sugar Loaf (with the
cable car) ride), the
Vista Chinesa (the city looks awesome from up there).
If she can (and likes this sort of thing), she could visit the
contemporanium art museum in Niterói. I don't care much about the exhibitions there but the architecture of the museum is amazing.
There are also really nice cities around Rio that she could visit, like
Arraial do cabo or
Buzios for the beaches or colonial cities like
Parati or
Petropolis
They're about 2-3h from downtown Rio, so she could go to one of these places if she has a weekend to spare here.
Do you know where she's gonna stay? Maybe I can think of something more specific if I know in which neighborhood she's gonna be.

She doesn't know her specific hotel yet, but her boss was excited because it's on the beach, if that helps. I imagine it won't, though. Seems like there'd be a bunch.

Yeah, the beach we all (read: everyone in Houston and surrounding areas) go to has brown water! :D
It's always been brown, though. Something to do with the sand/silt/whatever out there, I think ... but probably because of the ship channel.
